So... as I was making this I realized that it was very similar to my Spicy Mac with Chicken and Broccoli recipe. I probably should have used another veggie, but I love broccoli sooo much. Anyway, the sauce is different, and both are delicious, so let's just say it's a variation. :)
Ingredients:
4 chicken breasts, sliced into small strips
2 heads of broccoli, chopped
Salt and pepper to taste
1/4 c. butter
4 oz cream cheese
2 cloves garlic, minced fine
1 1/4 cup milk
4 oz. parmesan, grated
pepper to taste
1 lb. fettucini noodles, cooked according to package instructions
Prepare fettuccine in a large pot.
Meanwhile, heat oil in a large skillet. Add chicken and saute over medium heat until browned. Sprinkle with some salt and pepper.
Cover with broccoli and spread out broccoli layer evenly. Cover and cook until broccoli is bright green. Keep covered and set aside.
In a medium saucepan, melt butter over medium-low heat. Add cream cheese.
Whisk vigorously, allowing cream cheese to melt.
Add parmesan and garlic, continuing to whisk.
Add milk, very slowly, whisking constantly as you add.
When cheeses, milk, and butter are fully melted and incorporated into a white sauce, add pepper. Sauce will thicken quickly. If it gets too thick, gradually add a little more milk until it is at a desired consistency.
In the large pot, put in the drained noodles. Add chicken and broccoli.
Pour sauce over the top. Toss all ingredients together with two large spoons.
