Maple Pecan Cookies


These cookies are SERIOUSLY ADDICTING and super easy!

Ingredients
1 1/2 c. pecans, chopped
2 c. butter, softened at room temperature
1 cup brown sugar
1 1/2 tsp maple flavor (found in baking aisle with vanilla extract)
2 eggs
4 c. flour
1 tbsp white sugar
Icing:
1 1/2 c. powdered sugar
2 tbsp milk
1 tsp maple flavor


Preheat oven to 350.

Line a baking sheet with foil and spread out pecans in a single layer. Put in oven for 7 minutes, then set out to cool.

Cream butter and brown sugar in a large bowl. Beat in maple flavor and eggs with an electric mixer until fluffy.  


Stir in flour.


Add pecans and mix well.


Shape into 1 inch balls, space on cookie sheet 2 inches apart.


Flatten cookie with fork, then dip in granulated sugar and do a crisscross pattern.  Flatten all the cookies and bake for 11 minutes, or until they begin to brown.


Meanwhile, mix together the icing ingredients.


Cool cookies 1 minute on baking sheet, then transfer onto cooling rack. Cool 10 minutes.


Drizzle icing on top of cookies, cool until set, then transfer into storage container. I used a plate to drizzle, set them in the fridge, then transferred into my tupperware when the next batch were ready to be drizzled.
