Maple Glazed Salmon

Kevin and I picked up a bottle of good ole Vermont maple syrup when we were visiting some of his friends there, and whenever I have a good quality maple syrup I feel inclined to make this incredibly simple but tasty dish, which is one of my favorite meals to make because it is just so darn good and takes barely any prep at all.

1/2 c. maple syrup
4 tbsp soy sauce
2 clove garlic, minced
1/4 tsp garlic salt
1/8 tsp pepper
2 lbs. salmon filets

In a bowl, whisk together maple syrup, soy sauce, garlic, garlic salt and pepper.

Place in a shallow dish or a plastic bag and coat salmon with mixture.

Marinate 15 minutes. Flip fish over. Marinate 15 more minutes.

Preheat oven to 400 degrees.

Line baking dish with foil, grease with cooking spray. Place salmon skin side down on foil. Pour maple marinade over fish.

Optional: For a stronger maple flavor, fold up sides of foil on all sides so the marinade can cook into more of the fish.

Bake for 20 minutes uncovered. I served mine with pan-fried green beans and garlic mashed red potatoes.
