Breakfast Burritos



Some mornings I get up and I absolutely don't feel like prepping, making, and cleaning up after breakfast. This is my go-to for mornings like this, because there is virtually no prep and the clean up is super easy.  Breakfast is done in about 15 minutes.


Ingredients:

2 tbsp oil
1/2 bag of Ore-Ida Potatoes O'Brien
1/2 cup frozen corn
1 can black beans (I left this out)
1/8 tsp. cumin
1/8 tsp. chili powder
4 eggs
1 jar salsa
1 (4 oz) can of green chilis
1 package tortillas
1/2 cup shredded cheese (I used the Mexican blend, but cheddar or something similar would work)
sour cream, Sriacha, guacamole, and/ or cilantro to garnish


In a large skillet, heat the oil.  Add the frozen potatoes and heat on medium high heat. 


  Fry for a few minutes until it starts to brown, then add corn.
Add the black beans (I didn't add any because my boyfriend is not really a "bean" kind of guy.)


In a small bowl, crack the 4 eggs.  Add green chilis and a few tablespoons of the salsa.  (Save the rest of the salsa to top the burritos at the end).


Whisk until well incorporated.


Make a reservoir in the center of your skillet by pushing all the potatoes to the edges of the pan. Turn heat down to medium to low.


Pour the egg mixture in there and let cook for a few minutes until it starts to set.


When it starts to set, stir the middle and scramble the eggs.  When they are mostly scrambled, start folding the potatoes and corn into it.

Season with cumin, chili powder, salt and pepper.


Sprinkle cheese on top and cover.


Let sit a couple minutes, until cheese is melted.


In a tortilla, put a few scoops of the filling in.


Roll up and top with some sour cream, salsa, Sriacha, cilantro, whatever you want.  Enjoy!
