Pork Chops with Caramelized Pears


Ingredients:

4 pork chops, about 3/4 inch thick
1 cup italian bread crumbs
1/2 c. pecorino romano, grated fine
2 eggs
3 tbsp butter
2 pears, sliced
1/2 tsp cinnamon
1/4 cup brown sugar


In a skillet, heat butter on medium heat. Add pears.


Sprinkle cinnamon on top and stir well, then simmer until browned.


Add brown sugar, cover and simmer until pears start to soften.


Using a shallow dish, beat the eggs. Put cheese on a plate and shake out into a thin layer. Do the same on another plate with the bread crumbs.


Season chops with salt and pepper. Place in grated cheese and coat all sides.


Immediately put in beaten eggs and coat.


Place in bread crumbs and coat all sides.



Heat oil in a large skillet until hot. Place pork chops in skillet and cook 6 minutes on each side, until golden brown and internal temperature is 160.




Spoon pears on top. I served mine with brussel sprouts with bacon, and a side of corn.
